chocolate cake cookies

These were today's after-school snack at our house. And the only way they could be easier is if I scooped the cookie dough right out of a pre-made cookie dough bucket. They're so quick to make. And, well ... very, very chocolately. If you're into that sort of thing.

CHOCOLATE CAKE COOKIES

1 box chocolate cake mix
2 eggs
1/2 c. oil (I prefer olive oil)
1 c. semi-sweet chocolate chips

Mix all ingredients together. Bake at 350 for 8-9 minutes. Yield: About 3 dozen cookies.

Oh this could be really fun for the kids. I was thinking white cake and mini m&m's or yellow cake and butterscotch chips or yellow cake and chocolate chips.
Thanks Becky, gotta love this one...

This recipe is really similar to one I use for homemade oreos. Just omit the chocolate chips, make the cookies smaller (if you want) and then sandwich with cream cheese frosting. Yum!

I love this recipe, but if you want to make it a little more health friendly you can use applesauce for the oil and 3 egg whites instead of the eggs or 1/2 c. of eggbeaters. They taste the exact same. My kids love them.

I just have to say... I LOVE YOU!
these are very very yummy! I made some with a "cherry bit" white cake with chocolate chips and they are a little sweet but none the less very good...i used the super moist cake mix so i had to end up cooking it a little longer it was more like 12 minutes...what type of cake mix did you use for the chocolate??
P.s. I have tried tons of recipes on your site and i've bookmarked about everyone (^_^) i love how you try and test them and put the picture up! THANX!!

when they come out of the oven, pop an Andes mint on top of each cookie and after a minute--spread the melted chocolate over the cookie. I like to wait til they harden (in the fridge/freezer a few minutes) and the end result is delectable!!!
