chicken caesar pasta

This is another cold pasta salad, perfect for summer. And one that I've loved and made many times over the years.

CHICKEN CAESAR PASTA

16 oz. box rotini
2 boneless chicken breasts
1 bottle Cardini’s original Caesar dressing
1 Tbsp. crushed garlic
1 Tbsp. olive oil
1 pint cherry tomatoes
2 Tbsp. Mrs. Dash seasoning
1/3 red onion, chopped

Cook pasta and drain. Cut chicken into bite-size pieces and stir-fry in garlic & oil. Mix chicken in with the pasta. Add dressing, onion, and Mrs. Dash. Garnish with cherry tomatoes (optional: cut them in half).

We had this pasta over the weekend. I changed a few things, less pasta, less dressing, and I added an avocado. It was very good, one we'll keep having.

Hi Becky -
I am one of your many blog readers and you post some great recipes. I was wondering if you've ever heard of Tastefully Simple? I am a consultant for them and they have some wonderful products that I think you'd love . . . they are all about simple and gourmet and I know you can appreciate having great food and spending less time in the kitchen. Anyhow, thought I'd leave you my info (I live in Tucson) www.tastefullysimple.com/web/sdukat
Check out or line of foods . . . I don't think you'd be disappointed! And otherwise just wanted to say I love your work (Sketches - have them all and they are my fav for inspiration)! Susan
