fruit & poppy seed salad
This is probably our favorite "everyday", low-maintenance salad around here.
FRUIT & POPPY SEED SALAD
1 pkg. baby spinach or mixed greens (about 8 oz.)
1 pkg. strawberries, hulled & quartered
2 apples, diced
1 medium cucumber, cute in half & sliced
craisins
sliced toasted almonds
bottle of poppy seed dressing (we like Briannas brand)
Put the greens in a large bowl. Add all of the sliced & diced fruit. Add a little dressing at a time so it's not too much and then top with the sliced almonds just before serving (to keep them crunchy).

This is a spring favorite around here too. One thing we add is some sliced kiwi and mandarin oranges. :)

Do any of you think this would be a similiar salad to the one that is seasonal at Panera's??? It looks much like it, if you add blueberries and mandarin oranges.

A friend of mine made this salad over the weekend at a crop and it was a big hit! It was yummy and I can't wait to make it myself!

If your family goes through Brianna's dressing as fast as mine does, it can sure get expensive! I just figured out a copycat version that's close enough to please my eaters.
