chocolate oat squares

Recognize the picture? It's the one currently used on my new homepage. These delectable treats are one of my all-time favorites.



CHOCOLATE OAT SQUARES

1 c. plus 2 Tbsp. butter or margarine, softened, divided
2 c. packed brown sugar
2 eggs
4 tsp. vanilla extract, divided
3 c. quick-cooking aots
2 1/2 c. all-purpose flour
1 1/2 tsp. salt, divided
1 tsp. baking soda
1 can (14 oz.) sweetened condensed milk
2 c. (12 oz.) semisweet chocolate chips
1 c. chopped walnuts

In a mixing bowl, cream 1 c. butter and brown sugar. Beat in eggs and 2 tsp. vanilla. Combine the oats, flour, 1 teaspoon salt and baking soda in a separate bowl; stir into creamed mixture. Press 2/3 of oat mixture into a greased 9" x 13" baking stone (or pan). It's also fine in an 8" x 8" pan. You'll just have taller squares.

In a saucepan combine milk, chocolate chips and remaining butter and salt. Cook and stir over low heat until chocolate is melted. Remove from the heat; stir in walnuts and remaining vanilla. Spread over the crust. Sprinkle with remaining oat mixture. Bake at 350 degrees for 25 minutes or until golden brown. Allow to cool. Cut into squares.

Yield: 4 dozen.

Thanks for sharing - these look really good! I have a question for you. I made your mint fudge (big hit with playgroup!) I was wondering - do you have to keep the fudge refrigerated since it has cream cheese in it? My hubbie is taking some to work tomorrow and I'm not sure where he should keep it until the potluck starts. Thanks!

These remind me of a boxed baked good that was available when we were kids, and my hubby and I were just talking about it last week. Does anyone else remember "Fudge Jumbles"? I can't wait to give these a try. Thanks.

Oh my word, Becky! I thought only my family had the recipe for these! They were always called "Shauna's cookies" because the recipe came from a dear friend of my mom's named Shauna. Funny how recipes migrate among friends, isn't it?!?!

I hate you, I hate you, I HATE YOU!!! I'm drooling over my keyboard! I'm on a diet but how can I resist these?? I love oatmeal cookies in general and I bring boxes of oatmeal from Finland every time I go there because here in Italy we don't have oatmeal!!
I MUST try these. And if they are half as good as they look, I'll hate you even more!! :)))

Hi Becky -
I made these last week for a family gathering. I put them in an 8X8 square pan and when I went to cut them, they were REALLY gooey...just the way I like them, but I wasn't sure my family would like to have to eat them with a spoon. In my desperation (no-more-time-gotta-make-do), I put them in the freezer. OH MY GRACIOUS! Cut them up in thin slices and they are like healthy fudge!!!!! My family is crazy about them and everyone wants the recipe!
Thanks for disguising my favorite food as healthy! Go oatmeal!!!
