TACO SOUP
16 oz. can chili beans
16 oz. kidney beans
16 oz. can black beans
8 oz. can tomato sauce
15 oz. can diced stewed tomatoes
16 oz. can whole corn
16 oz. creamed corn
pkg. taco seasoning
1 Tbsp. chili powder
1 lb. ground beef
1 onion, chopped
1 sm. can chopped green chilies
Do not drain any of the canned foods. Add all ingredients to a crock pot and add taco seasoning to the soup. Brown the ground beef in a pan with the chopped onion and add this combination to the crock pot. Simmer for at least a couple of hours. Serve warm and garnish with optional toppings: shredded cheese, sour cream, tortilla strips (cooked in frying pan with olive oil and grated parmesan cheese). Another idea: Eat with large Fritos chips.

I love all of your recipes and this one looked awesome as soon as I saw the picture. I made it about 3 weeks ago and it turned out wonderful. I loved the idea about the tortillas and parm cheese!

I love taco soup! My recipe calls for a packet of ranch seasoning. I just use half, or it's too much, but it adds a great flavor!
I made it and my kids loved it, one said it was on the spicy side, but it was added to our family list of easy dinners. thanks becky!
i made this soup for my husband and it is now one of his favorites...when he asked me where i got it, i told him from becky higgin's website. he said, 'becky, isn't that the scrapbooker you LOOOOOOVE?' i responded, 'yep. we are so tight now we share recipes!'
now, every time i make something new he says,' did you get this from your best friend, becky?' since i am making the peppermint crumble cookies, i can say 'YES!' when he asks me.

I have a similar version of this recipe (most of the ingredients are the same), and it freezes really well. If you just double or triple this recipe then you can freeze it in ziplock bags. We like to eat it with fritos chips. Thank you becky for sharing great recipes. I'd like to try the pepermint fudge soon.
