apple pear salad

In our family, we love Costco for many reasons. The most recent reason? This recipe. Came across it in The Costco Connection magazine, actually. Made this for the first time last night and oh. my. goodness. We are so hooked. Absolutely, positively our new favorite salad. Thank you, Costco.



APPLE PEAR SALAD

[ dressing ]

3 Tbsp. extra virgin olive oil
2 Tbsp. red wine vinegar
2 Tbsp. orange juice
3 Tbsp. pecan halves, chopped (we prefer glazed pecans)
2 Tbsp. honey
Sea salt
Black pepper, ground

[ salad ]

6 c. loosely packed baby mixed greens
1 apple pear, halved, cored, and sliced into thin wedges
*NOTE: We used a pear and an apple, which worked just fine too
1/3 c. pomegranate seeds or dried cranberries
1/3 c. feta cheese

Sounds great and I will have to try it! Have you tried the bag salad at Costco yet? I found it at the Costco in Gilbert. Not sure of the exact name but it had dried cherries, almonds, bleu cheese, vinagrette dressing, with heart of romaine lettuce. So YUMMY!!!

I would use goat cheese because it is one of my favorite cheeses. But this is great. Keep these recipes coming! :)

know what else is good? A bag of coleslaw mix, (which I normally hate!) with dried cranberries and small chunks of apple, with coleslaw dressing of course. Yummy!!!

Sorry, isn't really my place to post a recipe here, but the apple bit just reminded me!

This is too funny!!! My daughter and I had almost this exact salad tonight! I use a pear and honey salad dressing from earth and vine it is soooo good and it only has 1 gram of fat per tbsp. I always add pears, goat cheese and turkey...and sometimes pecans. It is the BEST salad ever.

Made this last night. Was SO good! Will definately be my new salad for dinner parties! (my weakness is eating all the candied pecans before I finish making the salad!)
