garlic chicken farfalle

If you're interested in a pasta dish with serious flavor, give this is try. We're hosting a dinner party tonight, and my chicken is in the crock-pot now. This is one of our favorite things to make for a large group.



GARLIC CHICKEN FARFALLE

16 oz. Farfalle pasta
1 c. heavy whipping cream
3-4 chicken breasts (boneless, skinless)
2 to 3 cloves garlic, crushed OR garlic salt (I do a spoonful of crushed garlic)
1 Tbsp. pepper*
1/2 c. butter
1 lb. bacon, crumpled**
1/2 c. shredded Parmesan cheese
1 (12 oz) Lawry’s mesquite marinade with lime juice

*Seems like a lot of pepper, but it has a wonderful flavor when everything mixes together. If you're apprehensive, do less pepper. You can always add more.

**We like to cook our bacon in the oven (400 degrees, convection). Way less messy. And it's crispy every time. Time varies, so you just have to watch it. I think it's usually around 30 minutes. Allow to cool and then crumple (I totally wear disposable gloves for this part - surprise, surprise).

[ directions ]

Crock pot chicken and bottle of marinade on low for 6 hours. Pull marinated chicken out of the juices, allow to cool a little bit, and shred (I pull it apart). Set this aside. About a half-hour before serving, boil the pasta. In a small saucepan, melt butter, add garlic, whipping cream, pepper, parmesan cheese, and crumpled bacon. Whisk together on low heat for 3-4 minutes. In a large bowl, pour over cooked, drained pasta, add chicken and stir through. Sprinkle a little bit more shredded parmesan cheese on top.

Becky, this sounds divine!
But we don't have "mesquite" marinade here in Australia... can anyone tell me the main ingredients/flavours, perhaps I can fudge it a bit! I really want to try this...

I just have a reg electric oven. How long do you do your bacon then? Same time?
I am pretty sure we don't have this marinade either. I live in the boondocks. What could be a substitute?

Hi Becky -

Have you ever tried the recipe with turkey vs. regular bacon? I was thinking that with the heavy cream the turkey bacon could reduce some of the fat/calories but did not know if it would lose too much flavor???

Sounds good - am going to try it this week!

This was Sunday dinner today. Threw in the chicken before church and it was done when I got home, so it was pretty quick at that point. My family loved it.
I'm mental and thought I had the mesquite marinade with lime juice, but when I went to get it out of the cupboard, it was tequila lime marinade (got that lime thing all twisted up in my head I guess). I decided to go ahead and make it and it was fabulous. I can't wait to make it the RIGHT way.

Yummy! I can't wait to make this!

I just discovered cooking bacon in our panini maker. It cooks so fast, drains all the fat and turns out soooo crispy. I cooked a whole package of bacon the other day and we had bacon in the fridge all week. Clean-up is a bit of a pain, but worth it!

I know you can't possibly answer every question but, I thought I'd try and ask. Have you ever substituted anything for the heavy cream? My goodness girl how do you stay so skinny?? That would stay on my hips the rest of the year! hehehe Anyway I'd really like to try this recipe it sounds super yummy. I guess if you just eat it in moderation and make it for special occasions it's OK, right?

Hi Becky,
What kind of disposable gloves do you wear when working with food? I've always been afraid they would have something on them, like powder or another residue, that may contaminate the food. Are they special food gloves?

Also, to save a step, you could always use Costco's yummy roasted chicken instead of cooking your own (although it may not have the same flavor as the marinade will give it). This is only to save time when in a crunch.

You know, I always thought pre-cooked bacon sounded yucky, but some friends brought it camping, and what a life-saver! Done in minutes, literally no mess (most of the grease is cooked away already) and strangely enough, it's virtually the same price as regular bacon. You can heat it in a pan or in the micro, it's done as soon as it's hot. Easy for those nights you want to add some crumbled bacon, but aren't looking forward to a big clean up.

YUM-O! This was so good, I made it for two sets of grandparents plus our two kids last night and everyone was happy! I used the rotisserie chicken from a local market and it was delicious. Next time I will try the crock pot chicken w/marinade!

Someone asked about a substitute for whipping cream...I have heard that unsweetened, condensed milk (canned) makes a good nonfat substitute for heavy cream and I've tried it in soups before with good results, but didn't with this recipe. If anyone gives it a whirl let us know!

Wow, made this last night and it was such a bit hit. There is plenty leftover. I substituted turkey bacon instead of the pork and it was still yummy.

Thanks for the yummy recipe Becky. My husband wants to know about adding sun dried tomatoes to the sauce. I thought it was so very yummy, but unfortunately, my son refused to try it. Not one little bite! But he has been refusing anything new lately so not really suprised by it. :) So that means more lefts overs for US!!!!!! Yum yum.

Woo HOo made it Monday, it's awesome, we are going to try it sans the bacon and with 1/2 and 1/2 instead of cream. I recommend serving it with a salad, I didn't and it needed some color

MMM, MMM, GOOD! I couldn't find the specified mariade (until AFTER I made it, darn it- so I stocked up now:); anyway, used another mesquite marinade, and it was yummy!!! I have a friend at work, who after several months finally fessed up that she 'sneaks peaks and tastes' of my meals that I leave for when I come in that same night. Which I find to be a hoot actually! Anyway, surprised her and brought her some on my day off, while she was working, and she LOVED it!! Will be leaving the recipe for everyone at work now, at their request! Thanks Becky!!!

I made this for dinner tonight and it was fabulous! I did have to make one modification however, because when I went to the grocery story they didn't have the Lawry's marinade you mentioned - but I used KC Masterpiece Chipotle & Lime Marinade - totally delicious!!

Okay ladies and gents, I made this last night using NON-FAT EVAPORATED MILK. I also used 12 oz bacon not 16 and all seemed to taste fine, like I remember it being last time I made this.

I couldn't find any unsweeted condensed milk and a friend had also never heard of that but through Evaporated Milk would work so I tried it. I did use my hand mixer and "beat" the evaporate milk to fluff it up a bit before adding it to the pot. Hope this helps.

Served this yummy dish to my family, who loved it. I then served it on a scrapbooking weekend - big hit. I didn't tell the scrappers until after they ate, that I changed the recipe a bit - It is wonderful with Pheasant! If you have husbands who insist on hunting those birds, this is a great way to use up that meat. Along with this dish, the scrappers also had Becky's Butterscotch Apple dip and the Oreo truffles. We used Becky's book of Sketches to scrap with. I think we had a great theme going!

Can I just say, wow!? I made this the other night, and my husband just kept saying "Wow!" as he took several helpings.
I added some corn and chopped sauteed green peppers to give it some color, and it was SO good. This is definitely going into the favorite recipes file. Thanks for sharing!

I made this last week and it was delicious and EASY!!! I didn't have the 6 hours for the chicken, so I did 3 hours on high. The chicken was moist and shredded EASY!!

I also add some marinated artichoke hearts and sun dried tomatoes when it was finished.

I have 20 people coming & I AM DEFINITELY making this Chicken dish. I've had it at my sisters before & L.O.V.E. it! BUT, my question is, how much do you think I need to make for 20 poeple. What a great blend of flavors! My husband is actually our chef, and he whooped this up for dinner for the family. He added scallions and red pepper to the garlic white sauce, a nice addition. And I have leftovers for lunch at work the next day, my coworkers will so jealous.
