corn & avocado salsa
One word for this one: Addicting. My friend Nanci has made this several times. It's become one of her signature things, in my book, and once you have a bite, you'll want to make it your signature too! I finally made it the other day (so easy) and it was gone so fast.
CORN & AVOCADO SALSA
1 can white corn, drained
1 can black-eyed peas, drained
1/2 bunch green onion, chopped
1/2 bunch cilantro, chopped
4 med. tomatoes, chopped
3 avocados, chopped
1 pkg. Good Seasons Italian dressing mix
Mix together all ingredients and chill overnight.

I cant wait to try this I love avocados. I have made a few of your recipes and they are a big hit so thank you for sharing with us. I saw on one of your older posts you had a picture of white pumpkin cookies would you be willing to share the recipe. My husband loves anything pumkpin. My girlfriends and I LOVE this dip. This version (with the italian dressing mix) is our favorite. We also add a can of black beans. YUM.
I made this for our "April Birthdays" party this weekend! Usually I make the same old guacamole, etc. dips and everyone was eyeballing this cautiously saying, "Where's the guac?" They totally loved this salsa!!! I doubled the recipe and it was completely consumed! Thanks, Becky!!!

I have this recipe but it is called Texas Caviar. Just a "cheat", in lieu of the chopped cilantro, tomatos and onions substitute pico de gallo. It tastes the same but cuts down on the chopping. I am all about saving time. That's more time to scrap! :)
Okay Becky - I just thought I'd tell you, once again (are you sick of hearing from me?!) that your recipe was a HIT!! Made it for my husband to take to a council meeting at church yesterday and served it with tortilla chips. It was awesome!! Thank you for always sharing - my family loves you for it!!! Also, thought I might try black beans with it next time instead of black-eyed peas...ever done that?

ok we've made this 2ce (my 3 year old loves to help stir it up) and it's usually gone before i get to have some! i add the juice of half a lemon to it, and if you don't have black eyed peas- 1 can of black beans drained & rinsed works great too!

I have this recipe and you have forgotten the vinegar and oil that goes in this salsa.
SOOOO Delicious! I made this for one of our Christmas appetizers and it was a huge hit. I used canned petite diced tomatoes instead of fresh because supermarket tomatoes are just so gross this time of year (up north anyway)! I also have a vinegar/oil based recipe but liked this version much better.
