Only problem is I only have (had) a hand mixer and it kind of blew up while I was making them. I suggest using a high wattage mixer to make these, but I totally recommend them! My husband wouldn't keep his hands out of the cookie jar. I plan on making them again for a family reunion this weekend - yes, I bought a new mixer. I used the mint truffle hershey's kisses that were in stores around the holidays--they were just as good as the andes mints, and cheaper (especially when they go on clearance at Target!!) I hate waiting for cookies, so "chilling" is really not for me. I sucked it up and followed the recipe, but next time, I am going to substitute "Cake Box Cookies" for the cookie part, and the proceed with the Andes business.<BR/><BR/>Here's what you'll need:<BR/><BR/>1 cake box (obviously, Devil's Food in this case)<BR/>1/2 cup oil<BR/>2 eggs<BR/><BR/>Mix it up, and you're done. Bake at 350 for 8-10 minutes. Also works great w/any mix-ins...our personal fav is chocolate w/choc chips. But strawberry cake mix w/white choc chips is pretty good too.<BR/><BR/>But it's not chocolate.<BR/><BR/>But I digress. <BR/><BR/>(Great to hear from you...I love Christmastime!
